Fresh Apple Cake
3 C. tart apples, diced and peeled
2 1/2 C. Sugar
1 1/2 C. Vegetable oil
3 Eggs
3 C. Flour
1 tsp. Salt
1 tsp. Baking Soda
1 1/2 tsp. Almond flavoring
1 1/2 tsp. Vanilla
3/4 C. shredded Coconut
1 C. chopped Nuts.
METHOD
- Mix sugar in oil.
- Add eggs and mix.
- Combine dry ingredients.
- Stir the apples, nuts and coconut into the dry ingredients.
- Stir everything together. Add the flavorings.
- Pour into a greased and floured tube pan.
- Bake at 325 for 1 hour, 30 minutes, or until a pick inserted in the
cake comes out clean.
